  • ⅔ cup uncooked white rice
  • 3 bell peppers (halved and seeded)
  • ½ cup cherry tomatoes (quartered)
  • ½ cup Kalamata olives (chopped)
  • ½ cup feta cheese (divided)
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • 1 zucchini (diced)
  • Fresh dill
  • Extra virgin olive oil

Instructions

  1. Preheat your oven to 350°F.
  2. Cook the rice according to package instructions.
  3. Slice each bell pepper horizontally and lay them cut side up in a baking dish.
  4. In a skillet, heat olive oil and brown the ground chicken with salt and pepper until no longer pink.
  5. Stir in Italian seasoning, red onion, garlic, and zucchini; cook for an additional 2 minutes.
  6. Combine the cooked rice with the chicken mixture, cherry tomatoes, olives, feta cheese, and dill in a large bowl.
  7. Stuff each pepper generously with the mixture; sprinkle tops with extra feta and dill.
  8. Add water to the baking dish and cover with foil; bake for 40 to 45 minutes until peppers are tender.
  9. Serve warm with lemon wedges for added zest.
