  • 1 red bell pepper, chopped

  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup diced tomatoes (optional)
  • 1/4 cup shredded cheddar cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pierce each sweet potato with a fork and bake on a lined sheet for 40-50 minutes until tender.
  2. In a skillet over medium heat, heat olive oil. Sauté chopped onion for about 3-4 minutes until soft.
  3. Add minced garlic and chopped bell pepper; cook for another couple of minutes.
  4. Stir in ground turkey; break apart as it cooks for even browning (about 6-8 minutes).
  5. Add cumin, chili powder, paprika, salt, and pepper; mix well.
