  • 1 lb ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté the onion for about 3-4 minutes until softened.
  3. Add the ground turkey to the pan, breaking it apart as it cooks for about 5-6 minutes until browned. Drain any excess fat.
  4. Stir in garlic, bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for another 3-5 minutes.
  5. Transfer the mixture to the prepared baking dish and cover with foil. Bake for about 25 minutes.
  6. Remove the foil, sprinkle cheese on top, and return to the oven for an additional 10-15 minutes until bubbly.
