  • 2 medium sweet potatoes (peeled and diced)

  • 1 red bell pepper (diced)
  • 1 cup spinach (fresh or frozen)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheese (optional for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté chopped onion and minced garlic until fragrant (about 2-3 minutes).
  3. Add ground turkey to the skillet, cooking until browned (5-7 minutes). Season with smoked paprika, cumin, chili powder, salt, and pepper.
  4. Stir in diced red bell pepper and spinach; cook until tender.
  5. Boil diced sweet potatoes in another pot until soft (about 10 minutes); drain well.
  6. In a baking dish, layer the cooked sweet potatoes followed by the turkey mixture. Pour chicken broth evenly over everything.
