Ingredients

Scale
  • 4 large russet potatoes (washed and patted dry)
  • 4 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet.
  2. Place each potato between two chopsticks or skewers to prevent cutting all the way through. Slice vertical slits about ⅛ inch apart.
  3. Arrange the sliced potatoes on the baking sheet and brush half of the melted butter over them, ensuring to get into the slits.
  4. Season with kosher salt and pepper.
  5. Bake for 30 minutes, then pull apart the layers gently and brush with remaining melted butter.
  6. Return to the oven for an additional 30-35 minutes until crispy and tender.
  7. Serve warm, adding extra salt and pepper as desired.
