  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together pumpkin puree, maple syrup, Greek yogurt, vegetable oil, egg, and vanilla until smooth.
  3. In another bowl, mix whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Scoop the batter into a lined muffin tin about two-thirds full.
  6. Bake for approximately 18 minutes or until a toothpick comes out clean.
