  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together pumpkin puree, maple syrup, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, combine whole wheat flour, ground cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Fold dry ingredients into wet mixture until just combined.
  5. Spoon batter into lined muffin tins until two-thirds full.
  6. Bake for about 18 minutes or until a toothpick inserted comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.
