  • 1 Tbsp olive oil
  • 1 medium yellow onion, diced
  • 4 tsp garlic, minced
  • 1 lb ground turkey
  • 1 Tbsp brown sugar
  • 2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato paste
  • 4 cups beef broth (or vegetable broth)
  • 28 oz can fire-roasted crushed tomatoes
  • 15 oz can kidney beans, rinsed and drained
  • 15 oz can black beans, rinsed and drained
  • 15 oz can pinto beans, rinsed and drained

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onions and garlic; sauté until softened (3-4 minutes).
  2. Add ground turkey; cook until browned (5-7 minutes).
  3. Stir in brown sugar, chili powder, cumin, oregano, salt, pepper, and tomato paste.
  4. Pour in beef broth and crushed tomatoes; add rinsed beans. Mix well.
  5. Bring to a boil; reduce heat and simmer uncovered for about 30 minutes.
  6. Serve hot with desired toppings.
