  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter or 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, shredded
  • Fresh parsley, chives, thyme

Instructions

  1. Peel and cube potatoes; rinse under cold water.
  2. In a large pot over medium heat, melt butter or olive oil/butter mixture.
  3. Sauté onions until soft (5-7 minutes), then add minced garlic and cook for another minute.
  4. Sprinkle in flour and stir continuously to create a roux.
  5. Gradually whisk in broth while scraping the bottom of the pot.
  6. Add potatoes; bring to a simmer and cook until tender (15-20 minutes).
  7. Blend half the soup for creaminess and return it to the pot.
  8. Stir in milk and cream; add herbs and heat through gently.
  9. Remove from heat; gradually mix in cheddar cheese until melted.
  10. Season with salt and pepper before serving.
