Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup whole milk
  • 1 cup fresh raspberries
  • 1 cup dark chocolate chips
  • 1 tsp agar-agar powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, sugar, and baking powder until combined.
  3. In another bowl, mix eggs, vegetable oil, and milk until frothy. Combine with dry ingredients until just mixed.
  4. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  5. Melt dark chocolate chips in a heatproof bowl. In a saucepan, heat raspberries with agar-agar until dissolved, then combine with melted chocolate to make the mousse.
  6. Layer one cake on a serving plate, spread half of the mousse over it, place the second layer on top, and spread remaining mousse over the entire cake.
