  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon lemon zest
  • 1/2 cup marinara sauce
  • 1/4 cup grated Parmesan cheese (or nutritional yeast)

Instructions

  1. Preheat oven to 375°F (190°C). Pound each chicken breast between plastic wrap until about 1/2 inch thick. Season with salt and pepper.
  2. In a bowl, mix ricotta cheese, spinach, basil, parsley, garlic, and lemon zest until well combined.
  3. Spoon the filling onto one end of each chicken breast and roll tightly. Secure with toothpicks if necessary.
  4. Place the rolls seam-side down in a baking dish. Pour marinara sauce over them and sprinkle with Parmesan cheese. Cover with foil and bake for 25 minutes; remove foil for the last 10 minutes.
  5. Let rest before serving alongside sautéed vegetables or a fresh salad.
