  • 3/4 cup maple syrup (Grade B recommended)
  • 1 tsp arrowroot (or tapioca starch, or cornstarch)
  • 1/4 tsp sea salt
  • 1 1/2 cups half and half
  • 1 1/2 cups heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Whisk together the egg yolks, maple syrup, arrowroot, and sea salt until well combined.
  2. Gradually whisk in half and half over medium-high heat while stirring constantly until thickened enough to coat the back of a spoon; do not boil.
  3. Remove from heat and whisk in heavy cream and vanilla extract until smooth.
  4. Strain the mixture through a fine mesh sieve into a bowl to remove any lumps; chill in the refrigerator for at least four hours or overnight.
  5. Churn in an ice cream maker according to manufacturer's instructions for about 20–30 minutes until it holds its shape.
  6. Transfer to an airtight container and freeze for four to six hours until firm.
