  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, sear the seasoned chicken thighs for 3–4 minutes on each side until golden brown.
  3. Mix BBQ sauce and honey in a bowl; set aside.
  4. Toast uncooked rice in the same skillet for 1–2 minutes while stirring.
  5. Add chicken broth and half of the BBQ honey mixture to the skillet with rice; stir well.
  6. Return seared chicken thighs to the pan and pour over any remaining sauce.
  7. Cover and simmer on low heat for about 15 minutes.
  8. If using mixed vegetables, add them now and cook for an additional 5 minutes until tender.
