Instructions

  1. Preheat your oven to 325°F (160°C) and line a mini muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until it resembles wet sand. Press about a tablespoon into each liner to form the crust.
  3. Beat together cream cheese and sugar in another bowl until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Spoon the cheesecake mixture over the crusts in the muffin tins.
  5. Bake for 15-18 minutes until edges are set but centers are slightly jiggly.
