  • 2 tablespoons lime juice
  • Lime zest from 1 lime
  • 1 teaspoon chili powder
  • 1 tablespoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear, sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeño pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice (for salsa)
  • 1/4 teaspoon ground cumin (for salsa)
  • 1/4 teaspoon salt (for salsa)
  • 1/8 teaspoon pepper (for salsa)

Instructions

  1. In a bowl, mix olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper to create the marinade.
  2. Coat chicken breasts in the marinade and let them sit for at least 30 minutes (or longer for more flavor).
  3. Heat a grill pan over medium-high heat and cook the marinated chicken for about 5 minutes on each side until fully cooked.
  4. While the chicken cooks, combine chopped avocados, cherry tomatoes (or Roma), corn kernels, red onion, red bell pepper, jalapeño pepper, cilantro, minced garlic, lime juice, ground cumin, and salt to prepare the Avocado Salsa.
  5. Serve sliced chicken topped with generous scoops of Avocado Salsa.
