  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper to create a dry rub. Coat chicken pieces evenly with this mixture.
  3. In an oven-safe sauté pan over medium heat, cook turkey bacon until crispy; set aside but reserve fat in the pan.
  4. Sear chicken in the bacon fat until browned on both sides; remove from pan.
  5. Drain excess fat but leave some for flavor; sauté chopped cabbage for 2–3 minutes until slightly wilted.
  6. Add sliced potatoes and onions along with chicken stock; mix well.
  7. Return bacon bits to the pan and place seared chicken on top.
  8. Bake uncovered for 45–50 minutes or until chicken reaches an internal temperature of 165°F (75°C).
