  • Gnocchi (optional)
  • Olive or avocado oil
  • Turkey sausage or plant-based sausage
  • Leeks
  • Fennel bulb
  • Parsnip
  • Carrot
  • Celery
  • Garlic
  • Canned whole tomatoes
  • Canned navy beans
  • Chicken stock/broth
  • Kale
  • Fresh parsley
  • Lemon juice

Instructions

  1. If using gnocchi, cook according to package instructions; set aside.
  2. In a large pot, heat olive oil over medium-high and brown the crumbled sausage until cooked through.
  3. Add leeks, fennel, parsnip, carrot, and celery; season with salt, pepper, and Italian seasoning. Sauté until tender.
  4. Stir in garlic; add tomatoes and navy beans. Pour in chicken stock and mix well.
