  • 1 lb Korean sweet potato noodles (glass noodles)
  • 2 lb thin-sliced beef (or chicken, tofu, or shrimp)
  • 3 medium carrots, julienned
  • 1 large white onion, thinly sliced
  • 1/2 bunch green onions, chopped
  • 6 garlic cloves, minced
  • 1/2 lb spinach leaves
  • 4 tbsp sesame oil (divided)
  • 1 tbsp olive oil
  • 6 tbsp soy sauce (or tamari for gluten-free)
  • 3 tbsp brown sugar

Instructions

  1. Prepare the noodles: Boil water in a large pot and add olive oil. Cook sweet potato noodles for 5-6 minutes until tender yet chewy. Drain and set aside.
  2. Cook the beef: In a skillet over high heat, cook sliced beef until browned, seasoning with half of the soy sauce, sesame oil, and brown sugar. Set aside when done.
  3. Sauté vegetables: In another skillet, heat olive oil over medium-high heat. Add carrots and onion; sauté until soft. Stir in remaining soy sauce and sesame oil along with garlic and green onions for another minute.
  4. Incorporate spinach: Add fresh spinach leaves and stir until wilted.
  5. Combine everything: In a large bowl, mix noodles, beef, and sautéed veggies thoroughly. Serve warm with extra green onions if desired.
