  • 1 ¼ lbs. boneless skinless chicken breast
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 4 cloves garlic
  • 6 cups chicken broth
  • Juice of 1 lemon
  • 2 cups fresh spinach
  • ¾ cup orzo (uncooked)
  • lemon pepper seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon mustard powder
  • ½ teaspoon dried dill weed
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons butter
  • ½ cup heavy cream
  • ½ cup parmesan cheese (freshly grated)

Instructions

  1. Heat olive oil in a pot over medium-high heat and season chicken with lemon pepper.
  2. Sear the chicken until golden brown; then remove it from the pot.
  3. Deglaze the pot with white grape juice; add butter and sauté onions, carrots, and celery until softened.
  4. Stir in garlic and seasonings; add chicken broth and bring to a boil.
  5. Return the chicken to the pot to cook through.
  6. Cook orzo separately according to package instructions.
  7. Stir in heavy cream and Parmesan cheese; add fresh spinach until wilted.
  8. Finish with freshly squeezed lemon juice before serving.
