  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a large pot or Instant Pot on sauté mode over medium heat. Add finely chopped onion and garlic; sauté until soft and translucent.
  2. Stir in chopped tomatoes, ground cumin, paprika powder, turmeric, tomato paste, salt, and black pepper. Cook until tomatoes break down and release their juices.
  3. Add canned white beans and dry white beans along with vegetable broth. Mix well. If using an Instant Pot, close the lid and set to high pressure for 15 minutes; for stovetop cooking, bring to a boil and then simmer for 20-25 minutes until dry beans are tender.
  4. Adjust consistency with additional broth if needed before serving.
