  • 2 tbsp olive oil
  • 1 onion (finely chopped)
  • 3 cloves of garlic (finely chopped)
  • 4 ripe tomatoes (chopped)
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a large pot or Instant Pot on sauté mode. Add chopped onion and garlic; sauté until soft.
  2. Stir in chopped tomatoes, cumin, paprika, turmeric, tomato paste, salt, and pepper. Simmer for about 5 minutes.
  3. Add both canned and dry white beans along with enough veggie broth to cover ingredients.
  4. For stovetop cooking: Reduce heat and simmer uncovered for 20 minutes until dry beans are tender. For Instant Pot: Close lid and cook on high pressure for 15 minutes with natural release.
  5. Adjust consistency with more veggie broth as needed; taste and season accordingly.
