  • 2 Tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ tsp salt
  • ½ tsp oregano
  • ½ tsp crushed red pepper flakes
  • ½ tsp smoked paprika
  • ¼ tsp ground black pepper
  • ½ cup sun-dried tomatoes (roughly chopped)
  • ½ to 1 cup vegetable broth
  • 2 15-oz cans butter beans (drained)
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream
  • ½ cup grated parmesan
  • 2 Tbsp chopped fresh basil

Instructions

  1. In a large sauté pan over medium heat, melt unsalted butter and sauté minced garlic with salt, oregano, crushed red pepper flakes, smoked paprika, and black pepper for about 2 minutes until fragrant.
  2. Stir in sun-dried tomatoes and vegetable broth followed by the drained butter beans. Cook uncovered for about 5 minutes to meld flavors.
  3. Remove from heat and fold in fresh spinach until wilted. Add heavy cream and grated parmesan; mix until combined and creamy.
  4. Serve warm with crusty bread or over rice/pasta.
