  • 1 lb. ground chicken
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons olive oil

Instructions

  1. Sauté the onion in olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for another 30 seconds.
  2. In a bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper.
  3. Shape the mixture into eight patties about half an inch thick.
  4. Cook the patties in remaining olive oil over medium heat for 5-6 minutes on each side until golden brown and cooked through.
  5. Serve warm with garnishes such as tzatziki sauce or fresh herbs.
