  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté diced onion until translucent (about 5 minutes). Add minced garlic and cook for another 30 seconds.
  2. In a mixing bowl, combine sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Shape the mixture into eight patties (about ½ inch thick).
  4. In the same skillet, heat remaining olive oil over medium heat. Cook patties for 5-6 minutes on each side until golden brown and cooked through.
  5. Drain on paper towels and serve warm with garnishes like fresh herbs or Greek yogurt.
