  • 1 teaspoon dried thyme

  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice or quinoa
  • 1 cup roasted chickpeas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese (omit for dairy-free)
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt or coconut yogurt
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste
  • 3 tablespoons olive oil for vinaigrette
  • 2 tablespoons fresh lemon juice for vinaigrette
  • 1 teaspoon honey (omit for strict keto or Whole30)
  • 1 small clove garlic for vinaigrette, minced
  • ½ teaspoon dried oregano for vinaigrette
  • Salt and pepper for vinaigrette, to taste

Instructions

  1. Marinate the steak by whisking together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add the sirloin and let it marinate for at least 30 minutes.
  2. Grill or pan-sear the steak over medium-high heat for about 4–5 minutes per side for medium-rare. Rest before slicing.
  3. For tzatziki, mix yogurt (or coconut yogurt), grated cucumber (squeezed dry), lemon juice, minced garlic, dill, salt, and pepper.
  4. Assemble your bowls with grains as a base topped with sliced steak, fresh veggies, olives, herbs, tzatziki sauce, and drizzle with lemon vinaigrette.
