  • 1 cup packed brown sugar
  • 1 cup cold butter
  • 5 large eggs
  • 1 cup dark corn syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly spray two muffin tins with non-stick spray.
  3. In a bowl, mix flour and brown sugar; cut in cold butter until crumbly.
  4. Press about a tablespoon of crust mixture into each muffin tin cup.
  5. In another bowl, whisk together eggs, corn syrup, sugar, vanilla, and salt; fold in pecans.
  6. Pour filling over the crusts until almost full.
  7. Bake for about 40 minutes or until golden on top.
  8. Let cool for 10 minutes before transferring to a wire rack.
