Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • Soy sauce (optional)
  • Smoked paprika
  • Garlic powder
  • Salt and pepper

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces; season with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown.
  2. Remove chicken from the skillet; deglaze the pan with chicken broth, scraping up brown bits.
  3. Stir in honey BBQ sauce and soy sauce (if using). Simmer for 2-3 minutes.
  4. Add uncooked penne and enough water to cover pasta (about 1 to 1½ cups). Cover and simmer for 12-15 minutes until pasta is tender.
  5. Return chicken to the skillet; stir well and simmer for an additional 2-3 minutes.
  6. Adjust seasoning if needed; garnish with parsley, crushed red pepper flakes, and cheese before serving.
