  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1½ cups long-grain white rice
  • 2¼ cups chicken broth
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. In a large pot over medium heat, warm olive oil. Add chicken pieces seasoned with garlic powder, onion powder, chili powder, salt, and pepper. Sauté for about 5–6 minutes until mostly cooked.
  2. Stir in uncooked rice and the entire can of Rotel (juices included), cooking for an additional 1–2 minutes.
  3. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes until rice is tender.
  4. Once cooked, mix in nacho cheese sauce and 1 cup of shredded cheese until melted and creamy.
  5. Top with remaining cheese, cover for another 5 minutes until melted. Serve garnished with cilantro, avocado, sour cream, or jalapeños as desired.
