  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and season with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until mostly cooked.
  2. Stir in uncooked rice and Rotel (juices included), cooking for an additional 1–2 minutes to toast the rice.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and let simmer for 20–25 minutes until rice is tender and liquid is absorbed.
  4. Stir in nacho cheese sauce and 1 cup of shredded cheese until melted and creamy.
  5. Top with remaining cheese and cover for about 5 minutes until melted. Garnish with your choice of toppings before serving.
