  • 1 lb chicken sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, heat olive oil and cook the chicken sausage until browned. Remove from pot.
  2. Add diced onion and minced garlic; sauté for 3–4 minutes until soft.
  3. Stir in drained tomatoes, chicken stock, basil, oregano, and return sausage to pot. Simmer for about 10 minutes.
  4. Add ditalini pasta; cook until al dente (8–10 minutes).
  5. Reduce heat slightly; stir in heavy cream and grated Parmesan cheese until melted.
  6. Season with salt and pepper; garnish with fresh parsley before serving.
