  • 3 (8-oz.) blocks cream cheese
  • 1 cup packed brown sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 2 tbsp. all-purpose flour
  • 1 sleeve graham crackers (finely crushed)
  • 5 tbsp. butter (melted)
  • 4 tbsp. butter (for topping)
  • 1 3/4 cups whole or chopped pecans

Instructions

  1. Preheat your oven to 325ºF and grease an 8" or 9" springform pan.
  2. In a large bowl, beat softened cream cheese and brown sugar until smooth. Add eggs one at a time, then mix in sour cream, flour, vanilla extract, and salt.
  3. In another bowl, combine graham cracker crumbs, melted butter, brown sugar, and salt; press into the bottom of the prepared pan.
  4. Pour the cheesecake filling over the crust. For even baking, wrap the pan in foil and place on a baking sheet (use a water bath if desired). Bake for about 1 hour and 30 minutes until slightly jiggly in the center.
  5. Let cool in the oven with the door ajar for about an hour; then chill in the fridge for at least five hours or overnight.
  6. For the topping, melt butter and brown sugar in a skillet; stir in cinnamon, heavy cream, pecans, and salt until coated.
  7. Serve slices topped with cooled pecan mixture.
