  • 1 1/2 cups milk
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking pan.
  2. Cream together softened butter and granulated sugar until light and fluffy. Add the egg and vanilla; mix well.

  5. Whisk instant pistachio pudding mix with milk and heavy cream until thickened; refrigerate for 5–10 minutes.
  6. Spread the pudding over cooled cookie base and sprinkle with chopped pistachios.
  7. Chill for at least 2 hours before cutting into squares.
