  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans, toasted (optional)

Instructions

  1. Preheat your oven to 375°F and grease a 9×9-inch baking dish.
  2. In a large bowl, mix together the rolled oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, combine the pumpkin puree, milk, eggs, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until well combined.
  5. Transfer the batter to the prepared baking dish and sprinkle with toasted pecans if using.
