  • 1¼ cups canned pumpkin puree

  • 4 oz cream cheese
  • 4 tbsp unsalted butter
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, cloves, cardamom, and salt.
  3. In another bowl, mix canola oil, granulated sugar, brown sugar, eggs, pumpkin puree, and vanilla until smooth.
  4. Gradually fold the wet mixture into the dry ingredients until just combined.
  5. Pour batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Allow cooling before preparing the frosting by beating cream cheese and butter until smooth; add powdered sugar and vanilla gradually.
