  • 1 cup pure pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 tsp pumpkin pie spice
  • 1/2 cup maple syrup (for glaze)
  • 1/2 cup powdered sugar (for glaze)
  • 1/4 cup (55g) unsalted butter, melted
  • 1/4 cup (50g) light brown sugar, packed
  • 2 tbsp granulated sugar
  • 1/2 tsp kosher salt
  • 1/2 cup (100ml) milk
  • 1 3/4 cups (230g) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan.
  2. In a large bowl, mix melted butter, granulated sugar, brown sugar, pumpkin puree, eggs, vegetable oil, milk, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, cinnamon, pumpkin pie spice, and salt. Gradually combine the dry ingredients into the wet mixture without overmixing.
  4. Pour the batter into the prepared loaf pan and bake for 60-80 minutes or until a toothpick comes out clean.
  5. For the maple glaze, whisk together powdered sugar and maple syrup until smooth once the bread has cooled.
  6. Drizzle glaze over the cooled bread before slicing.
