  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt
  • Extra granulated sugar for topping

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare mini pumpkins by cutting off the tops and scooping out the insides, or set aside ramekins.
  2. In a saucepan over medium heat, combine heavy cream and granulated sugar; stir until dissolved. Add ground cinnamon, ground ginger, and salt.
  3. In a mixing bowl, whisk egg yolks until smooth; mix in pumpkin puree and vanilla extract.
  4. Gradually pour warm cream mixture into the pumpkin mixture while whisking continuously.
  5. Pour custard into prepared pumpkins or ramekins, placing them in a baking dish filled with hot water for even cooking.
  6. Bake for about 30 minutes until set but slightly jiggly in the center. Chill in the refrigerator for at least two hours.
  7. Before serving, sprinkle granulated sugar on top and caramelize with a kitchen torch until golden brown.
