  • 4 Mini Pumpkins or ramekins
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. If using mini pumpkins, prepare them by cutting off the tops and scooping out the insides.
  2. In a saucepan over low heat, warm the heavy cream with cinnamon and ginger until heated through.
  3. Whisk egg yolks and granulated sugar together until smooth.
  4. Gradually mix in the warm cream into the egg mixture while whisking continuously.
  5. Fold in pumpkin puree and vanilla extract until combined.
  6. Pour the custard into mini pumpkins or ramekins placed in a baking dish filled with hot water.
  7. Bake at 325°F (160°C) for about 30 minutes until set but jiggly in the center.
  8. Cool at room temperature then refrigerate for at least two hours before serving.
  9. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
