  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3/4 teaspoon salt
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 tablespoon plant-based butter, melted
  • 3/4 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1/4 cup maple syrup (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together vegetable oil, granulated sugar, brown sugar, pumpkin puree, vanilla extract, eggs, and milk until combined.
  3. Gently fold in the all-purpose flour, baking soda, spices, and salt until mixed but not overmixed.
  4. Prepare the topping by mixing granulated sugar and cinnamon in a small bowl.
  5. Fill a greased muffin tin three-quarters full with batter; sprinkle with cinnamon sugar topping.
  6. Bake for 20-24 minutes until muffins spring back when pressed.
