  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In one bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until well combined.
  4. Gradually fold the wet mixture into the dry ingredients until just combined; spread evenly in the greased dish.
  5. In a small bowl, combine sugars and cinnamon with chopped pecans and sprinkle over batter.
