  • 1 Β½ cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • Β½ teaspoon baking soda
  • Β½ teaspoon salt
  • 2 cups pumpkin puree
  • Β½ cup granulated sugar
  • ΒΌ cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Β½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and prepare your baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, mix flour, oats, 1 cup brown sugar, baking soda, and salt. Stir in melted butter until well combined.
  3. Press half of the mixture into the bottom of the prepared dish to form a crust.
  4. In a separate bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crust and spread evenly.
  6. Sprinkle the remaining crumble mixture on top.
  7. Bake for 30-35 minutes or until golden brown and set.
  8. Allow cooling completely before slicing into bars.
