  • ½ teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 teaspoon food coloring (orange, optional)
  • ½ cup chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well mixed.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually combine dry ingredients with wet ingredients without overmixing.
  6. Fold in chocolate chips, mini marshmallows, and graham cracker pieces.
  7. Drop rounded tablespoons of dough onto a baking sheet about 2 inches apart.
  8. Top each cookie with additional marshmallows and chocolate chips.
  9. Bake for 12 to 14 minutes until golden edges form but centers remain soft.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
