  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in pumpkin puree, egg, vanilla extract, and optional food coloring until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt; gradually add to the wet mixture until just combined.
  5. Fold in chocolate chips, mini vegan marshmallows, and broken graham cracker pieces gently.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about two inches apart.
  7. Top each cookie with extra marshmallows, chocolate chips, and graham cracker pieces before baking.
  8. Bake for 12 to 14 minutes until golden around the edges but soft in the center. Cool before serving.
