  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 2 cinnamon sticks or 1 ½ tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 2 double shots of blonde espresso
  • Cold oat milk

Instructions

  1. In a small saucepan, whisk together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water. Simmer on low heat for about 2-3 minutes until thickened.
  2. Remove from heat and stir in vanilla extract. If desired, strain through a fine sieve.
  3. In a sealable jar, combine one shot of espresso with 1-2 tablespoons of the syrup.
  4. Add ice cubes, seal tightly, and shake vigorously for about 20-30 seconds.
  5. Pour into a glass without transferring ice cubes and add fresh ice cubes. Top with cold oat milk.
