  • 110 grams coconut oil
  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar

  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit) and grease a small springform pan.
  2. In a large bowl, whisk together the eggs and brown sugar until light and fluffy. Add coconut oil, pumpkin puree, vanilla extract, and maple syrup if using; mix well.

  4. Pour the batter into the prepared pan and bake for about 25 minutes; then cover loosely with foil and bake for an additional 20 minutes or until a toothpick comes out clean but slightly moist.
  5. Cool on a wire rack before glazing with a mixture of powdered sugar, milk, and maple syrup.
