  • 2 cups cooked jasmine rice (preferably day-old)
  • 3 cups shredded cabbage (mix of green and red)
  • 1 cup sliced cucumber
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, grated or julienned
  • 1/2 cup chopped sugar snap peas
  • 2 green onions, sliced
  • 3 tbsp sesame oil
  • 4 tbsp soy sauce or tamari
  • 4 tbsp chili crisp
  • 2 tbsp peanut butter or tahini
  • 2 tbsp rice vinegar
  • 2 tbsp lime juice
  • 1 tbsp honey
  • Grated ginger, salt, and pepper to taste

Instructions

  1. In a bowl, whisk together the dressing ingredients: sesame oil, soy sauce (or tamari), chili crisp, peanut butter (or tahini), rice vinegar, lime juice, honey, grated ginger, salt, and pepper until smooth.
  2. Heat a splash of sesame oil in a large skillet over medium heat. Add the cooked jasmine rice and stir-fry for about 5–7 minutes until crispy and golden brown.
  3. In a mixing bowl, combine the sautéed rice with shredded cabbage, cucumber slices, bell pepper strips, grated carrot, sugar snap peas, and green onions.
  4. Pour the prepared dressing over the mixture and toss gently until well coated.
  5. Garnish with toasted sesame seeds before serving.
