  • 1 tablespoon olive oil
  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces chicken or turkey sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese and spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt to taste
  • fresh cracked pepper to taste
  • shaved Parmesan for garnish
  • fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onion until soft.
  2. Add minced garlic and Italian seasoning; cook for 30 seconds. Stir in tomato paste and cook for another minute.
  3. Crumble in sausage; cook until browned.
  4. Pour in chicken broth and crushed tomatoes; season with salt and pepper. Bring to a simmer.
  5. Add ravioli; reduce heat and simmer until cooked al dente, about 3-5 minutes.
  6. Stir in fresh spinach and heavy cream until heated through.
  7. Adjust seasonings before serving, garnishing with shaved Parmesan and parsley.
