  • 1/2 cup dairy-free butter (or coconut oil)

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dairy-free chocolate chips
  • 1/2 cup mini vegan marshmallows (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix flour, baking soda, and salt.
  3. In another bowl, cream together dairy-free butter, brown sugar, and granulated sugar until fluffy.
  4. Add vanilla extract to the butter-sugar mixture.
  5. Gradually combine dry ingredients into the wet mixture until just combined; fold in Rice Krispies gently.
  6. If using, fold in chocolate chips and optional mini marshmallows.
  7. Scoop dough onto lined baking sheets and bake for 10-12 minutes until golden around the edges.
