  • 2 cups cherries (halved and pitted)
  • 1 1/3 cup granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Spread halved cherries on a baking sheet, sprinkle with sugar, and roast for about 10 minutes until tender. Let cool.
  2. Lower oven temperature to 325°F and prepare an 8×8 baking pan with non-stick spray and parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. Using a mixer, beat together granulated sugar, eggs, and egg yolk for about five minutes until light.
  5. Stir in melted butter, oil, and vanilla extract until combined.
  6. Gently fold in dry ingredients followed by half of the roasted cherries and chocolate chips.
  7. Pour batter into prepared pan and bake for 40-50 minutes until edges set and center is slightly underdone.
  8. Cool completely before cutting into squares and topping with remaining cherries.
