  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half-and-half

  1. Preheat oven to 375°F (190°C). Cut off the top 1/4 inch of the garlic head, drizzle with olive oil, wrap in foil, and roast for about one hour.
  2. In a large pot, cover quartered red potatoes with cold water and add a teaspoon of kosher salt. Bring to a boil and simmer for about 15 minutes until fork-tender.
  3. Drain the cooked potatoes, return them to the pot, and add roasted garlic cloves. Warm the half-and-half and butter together before pouring into the pot.
