  • 21/4 cups mirepoix (diced carrots, celery, yellow onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk (your choice)
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  2. In the same pot, melt one tablespoon of butter and sauté the mirepoix for 5–7 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in chopped potatoes and spices, then pour in the chicken stock. Bring to a boil before reducing heat to simmer for 15–20 minutes until potatoes are fork-tender.
  4. In another pot, melt four tablespoons of butter over medium heat; whisk in flour for one minute. Gradually add milk while whisking until thickened. Stir in heavy cream.
  5. Combine the creamy base with the potato mixture off the heat; add shredded cheese gradually until melted. Stir in cooked sausage.
